Nestled in the Cascade Mountain foothills of Central Washington,
The Iron Horse Inn was originally constructed in 1909 by the
Chicago, Milwaukee, St. Paul, and Pacific Railroad. It served
until 1974 as temporary housing for men who had the job of
getting trains over some of the most hazardous tracks in the
country.
Now owned and operated by Doug and Mary Pittis, this Inn
features an extensive collection of historic photographs, artifacts,
and railroad memorabilia. The lovingly renovated Inn has been
placed on the National Register of Historic Places.
Each morning, the aroma of freshly brewed coffee and a full
country breakfast greets you as you enter our large and friendly
dining room. Doug who was trained in culinary cuisine at the
Culinary Institute of America, carefully prepares your morning
meal.
While you dine, examine the model trains and collection of
railroad lanterns as you enjoy a leisurely meal to begin your day.

Actually I thought a picture of Bill would look good on a Post Office wall. Oh well.......

Get out of bed carefully:
Getting out of bed won't really become a problem until your belly
starts to bulge in your second or third trimester. Once you've gained
a great deal of weight, you'll need to find a safe, comfortable way to
get out of bed. Try this: Roll over onto your left side (if you aren't
already in that position) and "tip" yourself out of bed, feet first.
When your legs touch the floor, use your arms to push yourself up into
a sitting position on the bed. From there, it's easier to get out of
bed. Don't hesitate to ask your partner for help if you need it. He
can give you a hand getting into bed, too, as well as help you find a
comfortable sleeping position.

How do I swaddle my baby?
Swaddling is the art of snugly wrapping your baby in a blanket for
warmth and security. It can also keep him from being disturbed by his
own startle reflex, and it may even help him stay warm and toasty for
the first few days of life until his internal thermostat kicks in.
Most important, it's a method that can help a baby get calmer. Lay a
blanket on a flat surface and fold down the top-right corner about 6
inches. Place the baby on his back with his head on the fold. Pull the
corner near the baby's left hand across the body, and tuck the leading
edge under the child's back on the right side under the arm. Pull the
bottom corner up under the baby's chin. Bring the loose corner over
the baby's right arm and tuck it under his back on the left side. Some
babies prefer to have their arms free, so you may want to swaddle your
child under the arms so he has access to his hands and fingers.

FROSTY PUMPKIN PIE:
Pumpkin pie doesn't have to be a winter-only dessert, if you make it
with cool, creamy ingredients--like butter pecan ice cream. Note that aromatic
bitters are a concentrated flavoring made from herbs and spices and
used to flavor cocktails and foods. You can buy small bottles at a
liquor store. (You can also leave out this ingredient if you prefer.)
Serves eight.
- 1 cup mashed cooked pumpkin (canned is fine)
- 1/4 cup packed brown sugar
- 1 teaspoon aromatic bitters
- 1/4 teaspoon salt
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cinnamon
- 1 (4-1/2 ounces) carton frozen whipped topping, thawed
- 1 pint butter pecan ice cream, slightly soft
- 2 tablespoons chopped pecans
Crust:
- 1-1/2 cups gingersnap crumbs
- 1/2 cup butter, melted
Preheat oven to 350 degrees. To make crust, mix gingersnap crumbs and
melted butter. Press firmly and evenly against bottom and sides of a
9-inch pie plate. Bake 10 minutes; cool.
Mix pumpkin, brown sugar, bitters, salt, ginger, nutmeg, and cinnamon.
Fold in whipped topping. Spoon ice cream into crust; spread to edge of
crust. Swirl pumpkin mixture over ice cream. Freeze at least three
hours.
Let stand at room temperature 15 minutes before serving. Sprinkle
pecans in circle on top of pie.
