Recipe: Grandma's Buttermilk Cornbread
Following the Pilgrims’ first winter in Plymouth in 1620–21, their numbers reduced by nearly half from illness and lack of shelter, one of the surest and strongest signs of relief came in the form of corn from the native Wampanoags. After learning how to grow, harvest, dry, and grind the new grain (which they called “Indian corn”), the settlers boiled the resulting cornmeal into a thick mush and baked it into cornbread. By embracing corn as a staple in their new diet, the settlers not only filled their bellies, but adapted a Native American tradition as their own.

If you like the sweeter, more cake-like cornbread served in New England and other areas, you'll adore this recipe. Try it for breakfast with butter and maple syrup!
    Ingredients:
  • ½ cup butter
  • ⅔ cup white sugar
  • 2 large eggs
  • 1 cup buttermilk
  • ½ teaspoon baking soda
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • ¼ teaspoon salt

  • Preparation Instructions:
  • Preheat the oven to 375 degrees F (175 degrees C). Grease an 8-inch square pan.
  • Melt butter in a large skillet over medium heat. Remove from heat and stir in sugar. Quickly whisk in eggs.
  • Combine buttermilk and baking soda in a small bowl; whisk mixture into the skillet. Stir in cornmeal, flour, and salt until well-blended and only a few lumps remain. Pour batter into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 30 to 40 minutes.

  • Serves 9
